This is like a fatbomb in popsicle form and I am 100% here for it. Ice cream is obviously one of the things that I miss the most and while I know this isn’t ice cream, it is frozen and creamy and way delicious. I got popsicle molds specifically to try this recipe, they were $10 on Amazon and they have been fantastic. They’re super simple but the size is good and the popsicles slide out easily after running the mold under hot water for a few seconds. I really want one of those Zoku instant freeze popsicle makers but I’m thinking that might be a birthday gift to myself in the summer, as dropping $100+ on a popsicle maker feels like the definition of frivolous and irresponsible!

In terms of flavour combos, I’ve tried orange and raspberry so far but I bet that any flavour would work wonderfully. I have peach, cherry and lime waiting in the wings and I bet that they will also be fantastic.

Creamy Jello Popsicles
Ingredients
- 1 package sugar free Jello
- 0.5 cup boiling water
- 1 cup heavy cream
Instructions
- Mix your Jello powder and boiling water until dissolved.
- Slowly drizzle in your heavy cream while whisking. Use a hand mixer immersion blender with whisk attachment.
- Pour into popsicle molds and freeze overnight.
