Nothing makes you feel old like birthdays and friends getting married. Seeing that so many friends are walking down the aisle these days AND I just had my 31st birthday AND I just found my first grey hairs I’m definitely feeling old lately. One of my wonderful girlfriends got married last month, and it got me reminiscing about all the fun times we’ve had over the past 15 years (wow that makes me feel old too). A fond memory I have with her is going to a local coffee shop that’s since closed for Spanish Lattes. Sweetened condensed milk and silky, strong espresso… we would sit and read our books together or do crosswords or just catch up. I have so many wonderful memories of our shared time sipping Spanish Lattes.
The popsicle version is so good. I have a nespresso machine and the regular vertuo coffee capsule is what I use and it’s the perfect amount of coffee for me to fill four popsicle molds. Because it’s just me and my roommate 4 is a good number, but if you’re making for a crowd double up for a more substantial number. You can get the recipe for the sugar-free condensed milk here but if you’re not particular about your sugar/carb count then you can go ahead and use the regular ole store bought. My only challenge with these little babies is not eating them too late in the day, I don’t use espresso but the strong coffee is enough to have me wired and wide awake as the clock ticks past midnight. Which is pretty late for me… another reminder that I’m getting old!
Spanish Latte Popsicles
- 1/3 cup sweetened condensed milk link in post for recipe for sugar-free!
- 1 cup strong coffee hot, freshly brewed
- brew your coffee and stir in the sweetened condensed milk until combined
- freeze in popsicle molds overnight and enjoy!
