This recipe does something special for me, and that is it makes me feel normal on keto. There are so many meals that are easy enough to keto-fy, and there are an amazing number of products on the market now that serve as keto-friendly substitutes to very carby things (such as bread or pizza crust). There are certain things, though, that just can’t be a part of my life anymore since eating keto. A smoothie, and most other fruit-based things, is high on that list. However, this smoothie makes me feel as though I’m not following any sort of diet plan at all! It’s sweet and refreshing and it tastes like any other smoothie!
It comes out to about 5 or 6 net carbs, depending on your protein powder and coconut milk etc. I do split one with my roommate which bumps it down to around 2.5-3 net carbs. I don’t find I need the whole smoothie, although it certainly is low enough on the carb count to work on even a strict keto meal plan. I also enjoy adding a sprinkle of this amazing KZ Clean Eating muesli and eating it like a (admittedly runny) smoothie bowl. I never thought I would be eating smoothies on a regular basis on keto but here we are! I can’t wait until strawberries are in season and I can freeze my own fresh, local strawberries when they are perfectly ripe. Strawberry Vanilla Smoothie
- 1/2 cup frozen strawberries
- 1/3 cup canned full fat coconut milk
- 2/3 cup water
- 1 scoop vanilla protein powder
- 1 tsp good vanilla
- Combine all ingredients in a large mason jar or pint glass
- Use an immersion blender to blend until smooth. Pop in a straw and enjoy!
